Hi everyone! Meet Emily, a senior nursing student at the University of Delaware. Here’s a little bit about her:

  1. What are your favorite healthy foods?
    • Snap peas, yogurt, granola, and avocados
  2. What are your favorite unhealthy foods?
    • Chocolate mousse cake, buffalo chicken wings, and nachos
  3. How do you “get up and do something” on a daily basis?
    • Emily makes sure to go for a walk outside at least once a day.
  4. What is your favorite healthy meal to cook?
    • Emily likes to make a chicken burger on kale with teriyaki cauliflower rice, peppers, sweet potato, and avocado.
  5. What are your personal health goals?
    • Emily is working towards more balanced meals throughout the day instead of one big meal per day.
  6. Why is your physical and mental health important to you?
    • Both aspects need to be balanced in order to feel at peace and ready to take on the day. As a nursing student, she needs to make sure that she focuses on herself to become healthy so that she can then work to help her patients do the same.
