Refreshing Spring Salad Recipe

As the weather warms and nature’s bounty begins to flourish, there’s no better time to embrace the vibrant, fresh produce of the season in a delicious salad. This simple yet flavorful recipe celebrates the best of spring and summer, combining crisp vegetables, tangy fruits, and zesty dressing for a refreshing culinary experience.

Ingredients:

  • 2 cups mixed salad greens (such as baby spinach, arugula, and romaine)
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup sliced cucumber
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped toasted walnuts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad Greens: Wash the mixed salad greens thoroughly and spin them dry in a salad spinner or pat them dry with paper towels. Tear any larger leaves into bite-sized pieces and place them in a large salad bowl.
  2. Add the Fruits and Vegetables: Add the sliced strawberries, blueberries, and sliced cucumber to the salad bowl with the greens.
  3. Sprinkle with Feta and Mint: Sprinkle the crumbled feta cheese and chopped fresh mint leaves over the salad ingredients in the bowl.
  4. Top with Toasted Walnuts: Scatter the chopped toasted walnuts over the salad for a crunchy texture and nutty flavor.
  5. Prepare the Dressing: In a small mixing bowl, whisk together the extra virgin olive oil, balsamic vinegar, and honey until well combined. Season with salt and pepper to taste.
  6. Dress the Salad: Drizzle the dressing over the salad ingredients in the bowl, using tongs or salad servers to toss everything together gently until evenly coated.
  7. Serve and Enjoy: Divide the salad among individual plates or bowls and serve immediately as a refreshing appetizer or side dish. Pair it with grilled chicken, fish, or crusty bread for a complete meal.
