New Rockstar Veggie Alert!
The new rockstar veggie who’s becoming even more of a rockstar in 2019 is cauliflower. This fan favorite veggie is being used as a low-calorie alternative. It’s replacing grains, starches, and high calorie carbohydrates. Hitting the shelves are products such as cauliflower rice, mash, pizza crust, and even mac and cheese (Kraft joined the wave).

This trend isn’t stopping in the frozen section. This year, brands are in the process of moving cauliflower products to the snack aisle. New products such as crackers, pretzels, and chips are being made using flour that’s made out of this protein-rich veggie. These products are predicted to be on the shelves this year.
What’s The Hype?
Cauliflower is plant-based, low-carb, and gluten free. One cup of cauliflower (raw) has 2 grams of protein, 5 grams of carbs, and 0 grams of fat. It is a great plant-based source of protein, vitamins and minerals, and low in saturated fats and cholesterol.
This is a great option for individuals that may be pre-diabetic, diabetic, or just looking to follow a diet with low-glycemic index. This is also a great option for individuals that still want to enjoy their favorite comfort foods (i.e pizza, mashed potatoes, and rice) without the added calories or guilt.
