Are you looking for an easy, healthy, low-effort on-the-go breakfast idea? Time after time, I have craved Starbucks egg bites, as they are perfect, savory, tasty, and have great macros! After seeing prices on the rise, especially when buying food out, it is unrealistic to buy those egg bites daily.
After researching several egg bite recipes and making them on my own, I realized how effortless making them are, how customizable they are, and how you can easily use ingredients that you already have in your fridge. They can last for a couple days, or weeks if you freeze them! You will not have to worry about what to eat in the morning, as they are the perfect breakfast to grab in a rush before heading to your first lecture, or for a busy day ahead!
*Makes about 9-12 egg bites*
Ingredients:
- 9-10 eggs
- 1.5 cups of frozen or fresh vegetables of your choice
- 1.5- 2 cups of mixed greens, spinach, arugula, or other greens of your choice
- Optional: 5-6 mini chicken sausage (I use Amylu breakfast sausage links!)
- Sprinkle of Feta Cheese to your desired liking
- Salt and Pepper to your desired liking
Directions
- In a large bowl, crack your eggs and combine your vegetables, greens of your choice, and salt and pepper.
- Whisk those ingredients together.
- If you’re using feta cheese and chicken sausage, chop your sausage and crumble your feta cheese, and add them into the same bowl while thoroughly mixing them into the egg mixture.
- Coat pan or muffin tin with cooking oil or spray. Pour egg mixture into a 8×8 baking pan or other equivalent pan/muffin tin size.
- Bake at 350 degrees for 40-50 minutes or until the mixture is solidified.
- Serve and enjoy with your favorite condiments!
