No-Bake Peppermint Cheesecake Bars Recipe

This no-bake dessert is not only easy to make but also captures the festive flavors of the season. It’s a perfect treat for holiday gatherings, and the peppermint adds a refreshing twist to the classic cheesecake. I highly recommend giving it a try! 

Ingredients: 

Crust: 

● 2 cups chocolate cookie crumbs (you can use crushed chocolate sandwich cookies)

●1/2 cup unsalted butter, melted 

Cheesecake Filling: 

● 2 (8 oz) packages low fat cream cheese, softened 

● 1 cup powdered sugar 

● 1 teaspoon peppermint extract 

● 1 cup heavy cream, whipped to stiff peaks 

Topping: 

● Crushed candy canes or peppermint candies for garnish 

Instructions: 

1. Prepare the Crust:

In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a lined or greased square baking dish to form an even crust. Place it in the refrigerator to set while you prepare the filling. 

2. Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and peppermint extract, and continue to beat until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined. 

3. Assemble the Cheesecake Bars:

Take the crust out of the refrigerator and spread the cheesecake filling evenly over the crust. 

4. Chill:

Place the assembled cheesecake bars in the refrigerator and let them chill for at least 4 hours or overnight until set.

5. Add Topping:

Before serving, sprinkle crushed candy canes or peppermint candies over the top for a festive touch. 

6. Slice and Serve:

Once fully chilled and set, remove the cheesecake from the refrigerator. Use a sharp knife to slice it into bars. Serve chilled and enjoy your delightful No-Bake Peppermint Cheesecake Bars!
