My favorite meal of the day is breakfast… so I make sure it not only keeps me full for long but satisfies my taste buds. Here are a few of my easy on the go breakfasts that taste too good to be true! Bonus – each of these recipes are completely plant based!
Chia Pudding
- ½ cup dairy free milk (my favorite is coconut milk)
- ½ cup chia seeds
- 2 tbsp. maple syrup (or any sweetener of your choice)
- 1 tsp vanilla extract
Mix all of these ingredients into a small jar or container and store in the fridge overnight. In the morning I like to add banana, peanut butter, and cinnamon. But the options are endless!
Additional add-ins to spice up your chia pudding:
- Cacao powder
- Berries
- Coconut flakes
- Nuts
Overnight oats
Another one of my favorite on-the-go breakfasts! Overnight oats keep me full for hours and definitely hit the sweet spot.
- ½ cup oats
- 1 cup nondairy milk (my favorite is oat milk or almond milk)
- cinnamon
- dash of salt
- 2 tabs of maple syrup
add a mashed banana for extra sweetness
In the morning add any nut, seed, or fruit of your choice. My favorites are sliced almonds, more maple syrup, chopped dates, and strawberries!
Banana Oat Pancakes
- 2 ripe bananas mashed
- dash of cinnamon
- ¼ cup of nondairy milk
- ¾ cup oats
Combine all the ingredients in a blender and cook on a nonstick pan. Add some peanut butter and syrup!
Avocado Toast
A simple but delicious go to! I love toasting two slices of Ezekiel bread with mashed avocado, sliced tomatoes, and of course Trader Joes Everything But the Bagel seasoning to make it that much tastier.
